This Instant Pot Arroz Caldo is an easy way to make a flavorful chicken rice porridge using the pressure cooker. Based on the Filipino recipe, aka Lugaw, this dish is a favorite comfort food

Ingredients

  • 1.5 cups of short-grain rice
  • 2 tablespoons cooking oil
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 2-inch piece ginger, peeled and sliced
  • 2 pounds chicken thighs, bone-in and skin-on
  • 6 cups chicken broth
  • Fish sauce (to taste)
  • Salt and pepper (to taste)
  • Green onions and fried garlic, for garnish
  • Lemon or calamansi wedges, for serving

Instructions

  1. Sauté Aromatics: Set the Instant Pot to 'Sauté' mode. Add oil, chopped onions, minced garlic, and ginger. Sauté until onions are translucent.
  2. Brown the Chicken: Add the chicken thighs and brown them on both sides.
  3. Add Rice and Broth: Stir in the rice, making sure it's coated with the aromatic mixture. Pour in the chicken broth.
  4. Cook the Porridge: Secure the lid of the Instant Pot and pressure cook for 20 minutes on manual high pressure, then use quick pressure release.
  5. Season: Open the lid, remove the chicken, debone it, and shred the meat. Return the shredded chicken to the pot. Season with fish sauce, salt, and pepper to taste.
  6. Simmer: Set the pot on saute mode and simmer for 5-10 minutes to thicken the soup (if needed)
  7. Serve: Ladle the Arroz Caldo into bowls. Garnish with green onions and fried garlic. Serve with lemon or calamansi wedges on the side.Soft boild egg is another popular garnish.
