Air Fryer Greek Chicken Gyros
This recipe for air fryer Greek chicken gyros is easy to make and includes tzatziki sauce (a cucumber sauce). I originally came across a recipe on Reddit for this and modified it a bit. I love these gryos for either dinner or lunch. I marinate the chicken overnight the day before if I plan on using it for lunch.

Marinade
Start by dicing up some chicken breasts or boneless thighs. I prefer thighs because they tend to be juicier. Then marinate in a mixture of olive oil, white wine vinegar, lemon juice, oregano, salt, and pepper. If you like spice, add some chili flakes or sriracha.

Let that sit in the marinade for at least three hours. You can either cover the bowl or put it in a plastic baggie.
Air Frying
I put my chicken on some wood skewers that were soaked in water. You can air fry the chicken loose though if you prefer. I find the skewers makes it easier to fit more in the air fryer.

Air fry or bake at 400 for about 16 minutes, flipping the skewers halfway through. Note that air fryers vary wildly in timing so keep an eye on things to ensure the chicken is sufficiently cooker or not over cooked.
When done baste the chicken with a bit of melted butter.
Tzatziki
Tzatziki sauce is key to good gyros. It is easy to make. Simply shred a cucumber (I prefer to use an English cucumber) and mix with plain Greek yogurt, lemon juice, olive oil, garlic, salt, and pepper.

I like to make the tzatziki ahead of time to let the flavors meld together.

Serving the Chicken Gyros
Serve your gyros on pitas with sliced onion, cucumber, and tomato. Top them with Tzatziki. I like to slightly warm my pitas to soften them first
