How to Make Instant Pot Corn on the Cob

I grew up in Nebraska, so corn is one of my favorite foods that reminds me of home. As a result, I love fresh corn on the cob, and using the Instant pot to cook it is perfect. Making Instant Pot corn on the cob is ridiculously easy and results in perfect corn with no hassle of boiling water. Let your pressure cooker do that work!

Before getting to the recipe, here is a bit of information about corn on the cob. The best corn on the cob starts with the best sweet corn.

How to Buy Corn on the Cob

First off, sweet corn is best when freshly picked. The sugars in corn start to turn to starch immediately upon picking, so you want very fresh corn. So, I like to purchase from farm stands that pick their corn fresh daily. If you are able to grow your own and take it straight from picking to the pot that is even better! You want to pick nice fresh, green ears of corn. If it is brown, it is guaranteed to not be sweet.

Look for the following when purchasing corn on the cob:

  • Fresh green husks that are not yellowed, brown, or dry. Husks should feel fresh and moist.
  • Bright and plump kernels situated in neat rows. Some farm stands will not let you peel the corn to look at it because doing so dries out the corn. If you can’t look, feel the husk to make sure the corn feels firm.
  • Silks should be soft and preferably yellow. A lot of silk is a good sign.
  • If forced to buy in the grocery store, look for prepackaged corn from Twin Garden Farms (often avaialbe in the Midwest). Their corn tends to be extra sweet and holds up better in shipping. I have gotten their corn at Costco at times and it held up its sweetness fairly well. So I tend to look for their brand.

How to Prepare and Store Corn on the Cob

  • Peel the husks and silk from your corn right before cooking.
  • Trim the ends of the cobs if needed to help them fit in the Instant Pot.
  • If you must store your corn before pressure cooking, leave the husks on and keep refrigerated to slow down the conversion of sugars to starch.
  • Corn retains its sugars when frozen. If freezing, blanch the corn first (you can do this in the Instant pot by setting the pressure time to zero). Frozen sweet corn reheats on the soft side, but I find it better than nothing in the middle of winter!

The steps for pressure cooking Instant Pot corn on the cob are super easy:

  1. Peel the corn and clean the silks from the cobs.
  2. Trim/cut the ends from the cobs as needed to help them fit in the pot.
  3. Pour one cup of water into the Instant Pot
  4. Place a trivet in the pot
  5. Place the ears of corn on the trivet, placing them vertically if necessary to maximize use of the space.
  6. Pressure cook on high pressure for 2 minutes (one minute for particularly firm corn).
  7. Quick release the pressure.
  8.  Serve with butter and salt, pepper, or other spices to taste.
