Ingredients
- 1 lb. gold baby potatoes, other baby potato variety, or larger potatoes cut into quarters.
- 1 c. water, vegetable, or chicken broth
- 3 T. unsalted butter, melted
- 1 t. garlic powder
- Salt and Pepper, to taste
- ¼ c. fresh parsley, finely chopped
- Optional Parmesan cheese to garnish
Instructions
Place the potatoes in the Instant Pot
Sprinkle the baby potatoes with garlic powder, salt, and pepper
Stir to combine.
Add water or broth to the pot and seal the cover.
Pressure cook on manual high pressure for 2 minutes.
Natural release the pressure for 5 minutes, then quick release the remaining pressure
Remove the lid and set aside.
Drain the potatoes and return them to the pot.
Add melted butter and parsley and toss to combine.
Transfer the potatoes to a serving bowl and season with salt and pepper to taste.
Garnish as desired with Parmesan, and enjoy!
