Buttered Instant Pot Baby Potatoes

These instant pot buttered potatoes can be made with halved, sliced, or quartered red potatoes. For Instant Pot baby potatoes, cut your potatoes in halves or quarters. For larger red potatoes, use slices. Whichever you use, you will get tasty buttered potatoes sort of similar to scalloped potatoes.  It is a great use of your pressure cooker!

This recipe also includes a vegetarian or vegan option.

Instant Pot Nutritious Potatoes

I love potatoes. As a runner, I like them for nutritious carbs and the amount of vitamins and minerals that they provide. They are a pretty nutritious starch! 

Aside from making potatoes in the Instant Pot, I also like to air fry them. For example Instant Vortex or Omni air fryer potatoes and carrots is one of my favorite go to side dishes.  

I have made this recipe with both baby potatoes and  larger red potatoes. The photos here are using slightly larger ones that have been sliced.  The recipe adds onion, garlic, butter and broth for great flavor.  If you are worried about calories, substitute margarine for the butter.

Vegan Instant Pot Potatoes

To make this recipe vegetarian or vegan, be sure to use vegetable broth and a butter substitute, such as non-dairy margarine, for vegan Instant Pot baby potatoes. For vegetarian, keep the butter if you consume dairy products. 

How to Make Buttered Instant Pot Baby Potatoes

This recipe is quick and easy! Start by slicing your potatoes or, if they are very small, halving or quartering them.  Place them into your Instant Pot or other pressure cooker. This recipe uses 10-12 medium red potatoes or 20 or so baby reds.

Slice some onions into half moon shaped slices and add those to the pot.

Next, add onions, butter, garlic, salt, and pepper.  I use prepared minced garlic. You can use a couple of cloves of fresh garlic instead if you prefer.

Finally, add the broth. I like to use vegetable broth, but you can use chicken or beef broth if you prefer.

Seal the pressure cooker and pressure cook on high pressure for 8 minutes. Use a quick release and give the potatoes a gentle stir before serving. 

Serving Instant Pot Buttered Potatoes

I like to serve potatoes as a side with beef or chicken. Since I have two Instant Pots, I really like to make baby potatoes in my 6 quart pot and then do a whole chicken in the Duo Crisp.  They go well together!

You can also add variations to this by sprinkling the potatoes with cheese or chives before serving or by adding a dollop of sour cream.  Parmesan is a tasty addition as well! 

Or, you can try garnishing the potatoes with parsley, rosemary or sage.

Buttered Instant Pot Baby Potatoes

This Instant Pot buttered baby potatoes recipe is a quick and easy side dish with lots of flavor from butter, onion, garlic, and broth. The recipe can be made vegan or vegetarian by using a non-dairy substitute such as margarine for the butter.

Ingredients

  • 10 to 12 red potatoes
  • 1 cup margarine or unsalted butter (add more salt if using unsalted butter)
  • 1 white onion; halved and sliced into rounds
  • 2 tablespoons garlic
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup vegetable broth

Instructions

  1. Place the insert into the Instant Pot.
  2. Slice larger potatoes into rounds. Halve or quarter baby potatoes
  3. Place potatoes into the instant pot.
  4. Slice onion into half-moon shaped slices and place in the Instant Pot.
  5. Add butter or margarine, garlic, salt, and pepper.
  6. Pour in one cup of broth of choice (I used vegetable broth).
  7. Place lid on the Instant Pot and seal it.
  8. Pressure cook on high pressure for 8 minutes, followed by a quick release.
  9. Gently stir potatoes, garnish and serve.
